Salt & vinegar potatoes! I think this is a Martha Stewart recipe. I found it on Pinterest. These were mini mixed white, gold & purple fingerlings sliced lengthwise and boiled for 8ish minutes in half water/half white vinegar (if I’d’ve had malt vinegar I would have used that), cooled x 30” in the boiling mixture then drained, patted dry, tossed w/grapeseed oil and kosher salt. spread face down on a cookie sheet and baked at 375F till brown and crispy on the flat side then flipped and baked some more. Dee-damn-licious.
